Dales Quick Beef Wellington

1kg Three Dales beef fillet
225g field mushrooms, wiped and chopped
400g puff pastry
2 tablespoons oil
1 egg, beaten – for glaze
Salt
Freshly ground black pepper
Seasonal baby vegetables
- Heat 1 tbsp of oil in a pan and sear fillet on all sides to seal. Season with salt and a generous amount of freshly ground black pepper. Transfer to a plate and leave to cool.
- Heat the remaining oil in the same pan and fry the mushrooms for a couple of minutes. Season well and reserve.
- Roll the pastry into an oblong large enough to enclose the fillet. Spread half the mushrooms along the middle of the pastry, the same length as the fillet. Place the fillet on top. Cover with the remaining mushrooms. Wrap the pastry around like a parcel, trimming away any excess.
- Transfer to a baking sheet. Brush the parcel with the beaten egg.
- Cook in a pre-heated oven Gas 6 400°F 200°C for 30 minutes for medium-rare beef.Tip: Pan roast seasonal baby vegetables and transfer them into the beef baking tray for the last 15 minutes of cooking time.
