Leek and Bacon Pasta

Serves: 4
2 large leeks, washed and sliced into 2″ pieces
250g bacon bits
1 medium onion, peeled and roughly chopped
1 dollop French mustard
1 tbsp balsamic vinegar
1 glass white wine
1 tbsp olive oil
250g fresh pasta
- Put a large pan of water on for the pasta. Heat the oil in a large frying pan or skillet.
- Fry the bacon and onion steadily until soft and starting to colour.
- Add the leeks and stir for a minute or so. Add the mustard and vinegar. Add pepper, depending on mustard and oil used. Stir, cover pan and allow to cook on a very low heat.
- Drop the pasta into boiling salted water until just cooked. Drain pasta and add to the contents of the skillet. Mix gently before serving with a green-leaf salad.
